Popsicles are definitely a summertime thing. These are a step up from the typical Otter Pop. Making your own fruit popsicles is much easier then you think and more healthy for you too. They make a fantastic guilt free hot summer day treat. You can totally go crazy with the different flavors you can mix together. I could seriously eat them all day! Yummy!!
If you don’t have popsicle molds you can use those little paper Dixie cups, just let the popsicles freeze for about 30 minutes then add the stick so it will stand straight up.
- 5 cups pitted cherries (about 2 lbs)
- 4 limes
- ½ cup water
- In a saucepan add all the ingredients, bring to a low boil reduce heat and simmer for 10-12 minutes. Remove and let cool.
- Using an immersion blender or food processor blend the cherries until smooth.
- Pour into popsicle molds and freeze for at least 2 hours. Remove by running warm water gently over popsicle molds. You can store them in a Ziplock freezer bag.
