Looking for a quick meal you can throw together using your leftover chicken? You should give this a try. I just love a good chicken salad sandwich. It can be made so many different ways, the varieties are endless. Enjoying it on a buttery flaky croissant and combining it with bacon and avocado puts it over the top! You can use left over chicken, or grab a rotisserie chicken from your local supermarket. I always happen to have just a little leftover to save so I can put on some buttery crackers for a quick snack.
- 3 large croissants
- 3 cups diced or shredded chicken breast
- ¼ cup mayo
- 2 teaspoon chopped fresh dill
- 3 green onions sliced
- 1 tomato
- 1 avocado
- 1 cup shredded lettuce
- 6 slices of cooked bacon
- salt and pepper
- In a mixing bowl add diced chicken, green onions, mayo and chopped dill and mix until well combined. Refrigerate for at least an hour.
- Cut each croissant in half, lengthwise, toast if desired. Spread chicken mixture. Top with bacon, tomatoes avocado and lettuce.
