Cilantro lime Rice
  • 1 cup long grain rice
  • 2 cups chicken stock
  • 2 tablespoons butter
  • 4 cloves garlic minced
  • juice of two limes
  • ½ cup chopped cilantro
  • 1 teaspoon salt plus more to taste
  1. In a large saute pan or pot with a lid add butter and rice and garlic. Cook over medium heat until garlic is fragrant about 2 minutes.
  2. Add water, cover pot and bring to a simmer. Reduce heat to low and cook until rice has absorbed all of the water about 20-25 minutes or until liquid is absorbed.
  3. Remove from heat and fluff with fork, stir in lime juice and salt add more of each if desired. Add cilantro toss and serve.
