Tilapia Fish tacos with Chipotle Ranch Sauce
 
 
Serves: 6-8
Ingredients
  • 1 lb Tilapia fillets (about 4-5 fillets)
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 2 tablespoon olive oil
  • 6-8 corn or flour tortillas
  • 1 cup finely shredded cabbage
  • 1 small tomato finely diced
  • ½ cup red onion diced
  • 1 jalapeno sliced
  • 1 avocado diced
  • Cotija cheese
  • 1 cup cilantro
  • 2-3 limes
  • Chipotle Ranch
  • ½ cup ranch dressing
  • 2-3 teaspoons diced chipotle in adobo sauce
  • juice of ½ a lime
Instructions
  1. In a small bowl add paprika, chili powder, cumin,garlic and salt and mix until combined. Rub seasoning on both sides of tilapia filets.
  2. Heat a large skillet on medium high heat, add olive oil and cook filets for 3-4 minutes on each side. Or until fish flakes with a fork. Remove to a plate and chop tilapia into chunks, squeeze the juice of 2 limes over tilapia.
  3. In a skillet, or microwave heat corn tortillas for about 15-20 seconds to make them more pliable.
  4. Add tilapia, cabbage, tomatoes onions and avocado. Drizzle with chipotle ranch, and sprinkle Cotija cheese and cilantro on top.
  5. **You could substitute 1 teaspoon chipotle powder.
