Tequila Lime Grilled Chicken Club

This Tequila-Lime Grilled Chicken Club is tender and juicy and the perfect alternative to beef burgers for your next summer meal.
Ingredients
- 4 6- ounce Chicken Breasts
- 1/4 cup tequila
- 2 chipotle peppers in adobo sauce diced
- 3 cloves garlic minced
- juice of 2 limes
- 1/4 cup chopped cilantro
- 1 teaspoon kosher salt
- 8 slices cooked bacon
- Cheese slices
- Tomato
- lettuce
- Buns
Chipotle Mayo
- 1/2 cup Mayonnaise
- 2 chipotle peppers in adobo sauce diced
Instructions
- Place one chicken breast in a resealable plastic bag or between two pieces of plastic wrap. Using a mallet or rolling pin pound each out to about ¼ inch thick.
- In a zip lock bag combine tequila, Chipotle peppers, garlic, lime juice, cilantro, and salt. Add chicken and marinate for 2 hours.
- Heat grill on medium-high heat, grill chicken 3-4 minutes on each side. Add cheese and let melt.
- In a small bowl combine mayonnaise and Chipotle peppers and mix well
- Assemble the sandwiches and enjoy!
