Starbucks Copycat Banana Nut Bread

Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1 1/8 cup sugar
  • 1/2 cup vegetable oil
  • 2 tablespoons buttermilk
  • 1 teaspoon vanilla
  • 3 extra ripe bananas
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 325 degrees, spray a 8x5 loaf pan with non stick spray and line it with parchment paper if desired.
  2. In a medium bowl add flour, baking soda, salt and cinnamon and whisk just until combined.
  3. In another medium bowl add egg, sugar and oil and whisk until combined.
  4. Add the dry ingredients to the wet ingredients and mix well, the mixture will be thick and dry.
  5. Add in the buttermilk, vanilla and smashed bananas and mix until combined.
  6. Pour into a loaf pan, sprinkle walnuts over the top.
  7. Bake on the center oven rack for 60-75 minutes or until knife comes out clean.
