  • 4 6- ounce Chicken Breasts
  • 1/4 cup tequila
  • 2 chipotle peppers in adobo sauce diced
  • 3 cloves garlic minced
  • juice of 2 limes
  • 1/4 cup chopped cilantro
  • 1 teaspoon kosher salt
  • 8 slices cooked bacon
  • Cheese slices
  • Tomato
  • lettuce
  • Buns

Chipotle Mayo

  • 1/2 cup Mayonnaise
  • 2 chipotle peppers in adobo sauce diced


  1. Place one chicken breast in a resealable plastic bag or between two pieces of plastic wrap. Using a mallet or rolling pin pound each out to about ΒΌ inch thick.
  2. In a zip lock bag combine tequila, Chipotle peppers, garlic, lime juice, cilantro and salt. Add chicken and marinade 2 hours.
  3. Heat grill on medium high heat, grill chicken 3-4 minutes on each side. Add cheese and let melt.
  4. In a small bowl combine mayonnaise and Chipotle peppers and mix well
  5. Assemble the sandwiches and enjoy!
