Banana Fritters are made with a cakey batter, loaded with sweet bananas, and deep fried to perfection coated with a sugar glaze. A delicious snack or sweet treat everyone will love.
1. In a medium bowl, combine the eggs, milk, vanilla, and melted butter. Set aside.
In a separate large bowl, whisk together the flour, baking powder, brown sugar, salt, and cinnamon
Add the egg mixture to the flour mixture, stirring until smooth.
Fold in chopped bananas. Don’t overmix.
Fill a Dutch oven/cast iron pot with at least 2 inches of vegetable oil and heat on medium-high use a candy thermometer to know when it reaches 350°F.
Using a tablespoon or a cookie scoop, dollop the batter into the oil, cooking 4-5 at a time. Cook the fritters, turning them over, for about 2 minutes per side for a total of about 3-4 minutes until deep golden brown. (to test for doneness insert a toothpick into the center to see if it comes out clean)
Remove fritters from the oil with the spider tool and place them on a tray lined with paper towels.
Make the glaze by combining powdered sugar, milk, and vanilla.
Let the fritters cool slightly, then dip in the glaze. Serve warm.

I use a cookie scoop to drop the batter, larger fritters will change the cooking time.You can also sprinkle powdered sugar on top. Or roll the fritters in a cinnamon-sugar mixture.I recommend using a candy thermometer to control the oil temperature.How to store These are best eaten fresh but if you have leftovers store them in an airtight container for 3-4 days. Reheat in a frying pan with a little oil until warm.
