Homemade Green Bean Casserole

Homemade green bean casserole is a classic side dish that goes with almost any meal. It is easy to make and everyone loves it! This version uses fresh onions, bacon, and cheese to kick it up a notch!

Ingredients

  • 1-1/2 lb Green Beans trimmed
  • 3 Slices Bacon chopped
  • ½ Cup Yellow Onion diced
  • 2 Cloves Garlic minced
  • 12 oz Fresh Mushrooms chopped
  • 3 Tablespoons Butter unsalted
  • 3 Tablespoons Flour All Purpose
  • 1 10oz Can Cream of Mushroom Soup
  • 1 Cup Chicken Bone Broth
  • ½ Cup Mozzarella shredded
  • ½ Cup Parmesan shredded
  • ¼ Teaspoon Black Pepper freshly ground
  • ½ Teaspoon Fresh Thyme
  • 6 oz French Fried Onions

Instructions

  • Preheat oven to 350°F.
  • Take Green Beans and slice in half.  Steam in a steaming basket for 10 minutes to almost cooked.
  • In a large 12” Skillet fry the bacon pieces until crispy.
  • Add the diced yellow onion and cook until translucent. 
  • Add the mushrooms and garlic and cook for about 5 minutes, until the mushrooms are soft.
  • Remove this mixture to a plate and set it aside.
  • Add the butter and flour to the same skillet and cook on medium heat until the flour starts to change color.  About 5 minutes.
  • Add the cheeses, mushroom soup, and bone broth, On the same medium heat continuously stirring to combine.
  • Add the mushroom mixture back with the black pepper and thyme and stir to combine.
  • Last, add the green beans and toss until well mixed.
  • Add this mixture to a 9x13 casserole dish and sprinkle the French fried onions evenly over the top.
  • Bake in the oven for 30 minutes, uncovered.  If you feel the onions are cooking too much on top place a piece of foil over them during the last few minutes.  You’ll want the dish to be bubbling when you take it out.
