Slow Cooker Baby Potatoes

Slow Cooker Baby Potatoes are a simple recipe and will be your new favorite side dish to a weeknight meal or holiday meal. Tender, creamy potatoes are a delicious side dish to any meal.

Ingredients

  • 3 pounds baby potatoes *see notes
  • 2 tablespoons olive oil
  • 2 tablespoons butter melted
  • 5 cloves garlic smashed and roughly chopped
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh chopped rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated parmesan cheese
  • Fresh chopped parsley

Instructions

  • Wash and dry the potatoes, then cut the potatoes in half.
  • In a large bowl add the halved potatoes olive oil, melted butter, garlic, thyme, rosemary, salt and pepper and mix until combined.
  • Pour the potato mixture into a slow cooker, cover and cook for 3-4 hours on high or 5-6 hours on low.
  • Optional: Place the cooked potatoes on a foil-lined baking sheet and under the broiler for 5 minutes to crisp them up. Keep an eye on them and toss them every couple of minutes to prevent burning.
  • Sprinkle with grated parmesan cheese and fresh chopped parsley and serve!

Notes

You want to make sure the potatoes are all cut to the same size for even cooking.
Small red potatoes, small Yukon gold potatoes or a combination, even fingerling potatoes work great in the recipe. You can also use larger potatoes you just need to cut them down to about 1 inch in size.
