Southern Fruit Cobbler

Southern Fruit Cobbler is loaded with juicy berries and topped with a rich buttery topping. This is an easy summer dessert that will become a new family favorite everyone will go crazy for!

Ingredients

  • 6 cups of berries we used 3 cups blackberries and 3 cups blueberries
  • 1 ½ cup granulated sugar plus ¼ cup, divided
  • 1 tablespoon lemon juice
  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 6 tablespoons unsalted butter melted
  • ¼ cup of whole milk

Instructions

  • Wash berries and set aside (they do not have to be completely dry), and sprinkle with ¼ cup of granulated sugar, and lemon juice and set aside for 15 minutes while you prep the topping (Note: this allows the berries to create juice that will be essential to the dish).
  • Preheat oven to 375F degrees, lightly grease a 9x13 pan and set aside.In a large bowl, whisk together all-purpose flour, 1 ½ cup sugar, salt, and baking powder until fully incorporated.
  • Pour in the melted butter and milk and mix until fully incorporated. The dough will be lightly damp all over, with no dry crumbs.
  • Pour the berries and any juices into the bottom of the 9x13 pan and unevenly cover it with flatted stones of the dough mixture. (Note: keep the dough the same thickness, but the sizes of the cobblestones can differ, and will not cover all the berries).
  • If desired, sprinkle another tablespoon or two of sugar over the top and bake until golden brown, about 35-40 minutes. Allow it to cool slightly and enjoy.

Notes

Mix different types of berries: Mixing different types of berries, such as strawberries, blueberries, raspberries, and blackberries, can add depth of flavor and a beautiful array of colors to your cobbler.
Frozen berries: I prefer to use fresh fruit but you can use frozen berries, no need to thaw them first. Just be aware that frozen berries will produce a more liquid filling.
Don't overmix the batter: Be careful not to overmix the batter or the topping, as this can result in a tough or dense cobbler.
Berry cobbler is best served warm, straight out of the oven, with a scoop of vanilla ice cream or a dollop of my Homemade Whipped Cream on top.
