Easy Smore's Cookie Bars are everything you love about the classic dessert soft and chewy loaded with graham cracker crumbs, a gooey marshmallow swirl, and chocolate chips!
1cupmilk chocolate chips plus some extra for the top.
Instructions
Preheat the oven to 350 degrees. Line a 8x8 baking pan with parchment paper or aluminum foil leaving some on the overhang on the side to grab.
In a medium bowl add the flour, graham crackers, baking powder, salt, and cinnamon and mix until combined.
In a large bowl using a hand mixer beat the softened butter and sugar until combined.
Add in the egg and vanilla and mix.
Mix the dry ingredients into the wet until creamy.
Press 2/3 of the cookie dough into the baking pan.
Add a layer of marshmallow creme over the top, and sprinkle the chocolate in an even layer.
Gently press pieces of the remaining cookie dough and place them on top of the chocolate chips.
At this time you can sprinkle some roughly chopped graham crackers, extra chocolate chips, and even mini marshmallows on top.
Bake for 26-28 minutes or until golden brown and bubbly.
Remove from the oven and let cool completely before slicing.
Notes
Use a wet knife to spread the marshmallow layer, it can be pretty sticky.You can make your own graham crackers crumbs by using a food processor, takes about 9 graham crackers to make one cup.Milk chocolate chips, semi-sweet all work fine. You can use chocolate chips, Hershey's chocolate bars or even chocolate chunks.
