Easy S'mores Cookie Bars

Ingredients

  • 1 cup all purpose flour
  • 1 cup graham cracker crumbs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter at room temperature
  • 3/4 cup dark brown sugar packed
  • 1 egg
  • 1 1/2 teaspoon vanilla
  • 1 7- ounce jar of marshmallow creme
  • 1 cup milk chocolate chips plus some extra for the top.

Instructions

  • Preheat the oven to 350 degrees. Line a 8x8 baking pan with parchment paper or aluminum foil leaving some on the overhang on the side to grab.
  • In a medium bowl add the flour, graham crackers, baking powder, salt, and cinnamon and mix until combined.
  • In a large bowl using a hand mixer beat the softened butter and sugar until combined.
  • Add in the egg and vanilla and mix.
  • Mix the dry ingredients into the wet until creamy.
  • Press 2/3 of the cookie dough into the baking pan.
  • Add a layer of marshmallow creme over the top, and sprinkle the chocolate in an even layer.
  • Gently press pieces of the remaining cookie dough and place them on top of the chocolate chips.
  • At this time you can sprinkle some roughly chopped graham crackers, extra chocolate chips, and even mini marshmallows on top.
  • Bake for 26-28 minutes or until golden brown and bubbly.
  • Remove from the oven and let cool completely before slicing.

Notes

Use a wet knife to spread the marshmallow layer, it can be pretty sticky.
You can make your own graham crackers crumbs by using a food processor, takes about 9 graham crackers to make one cup.
Milk chocolate chips, semi-sweet all work fine. You can use chocolate chips, Hershey's chocolate bars  or even chocolate chunks.
