    Easy S'mores Cookie Bars are everything you love about the classic dessert. Soft and chewy loaded with graham cracker crumbs, a gooey marshmallow swirl, and chocolate chips!

    These ultimate chocolate chip cookie bars are a great summer treat and will be a huge hit, perfect for cookouts and potlucks or your next summer gathering like my M&M Cookie Bars! A perfect crowd-pleasing dessert like my Kitchen Sink Cookies!

    These gooey cookie bars are always a hit and you can enjoy classic s'mores flavors all year long with no campfire needed! You get crispy graham crackers, gooey marshmallows, and melted chocolate in every bite.

    Notes

    • Brown sugar: Both light brown sugar and dark will work here.
    • Chocolate chips: I use milk chocolate chips but semi-sweet chocolate chips are fine to use or even chopped Hershey bars.
    • Marshmallow Fluff: Sometimes called marshmallow creme!
    • Graham crackers: You can either buy the crumbs or make your own with 10 graham crackers.

    How to make these cookie bars

    All the dry ingredients mixed together in a bowl. Butter and sugar mixed together in a bowl then the egg added in and mixed.
    • Step 1: In a small bowl add the dry ingredients and mix.
    • Step 2: In a large bowl combine butter and sugar and use an electric mixer to beat just until combined.
    • Step 3: Add in the egg.
    • Step 4: Beat just until creamy.
    The dry ingredients mixed into the wet then some of the dough pressed into a baking pan followed by marshmallow creme on top.
    • Step 5: Add in the dry ingredients.
    • Step 6: Mix until combined.
    • Step 7: Press 2/3 of the cookie dough into the bottom of the pan lined with parchment paper or aluminum foil.
    • Step 8: Add a layer of marshmallow cream on top.

    • Step 9: Sprinkle chocolate chips on top.
    • Step 10: Place the remaining cookie dough on top of the marshmallow layer, sprinkle graham cracker pieces, chocolate chips, and extra mini marshmallows bake until golden brown and bubbly.

    Recipe Tips

    • Allow the bars to cool completely before cutting them into squares. This will help them set properly and make it easier to slice without making a mess.
    • Make sure you line your baking pan with parchment paper or foil it helps to remove them from the pan to cut.
    • Use a wet knife to spread the marshmallow layer, it can be pretty sticky.
    • You can make your own graham crackers crumbs by using a food processor, takes about 9 graham crackers to make one cup.

    Can these easy s'mores bars be frozen?

    Yes, Once completely cooled place it in a large ziplock freezer bag and freeze for up to 3 months.

    Can I use Marshmallows instead of fluff?

    No regular marshmallows will just melt into your cookies. Marshmallow fluff makes these cookies super gooey and delicious!

    What's the best chocolate to use?

    I prefer milk chocolate chips, but semi-sweet works great also. You can use chocolate chips, Hershey's chocolate bars, or even chocolate chunks.

    Ingredients
      

    • 1 cup all purpose flour
    • 1 cup graham cracker crumbs
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon cinnamon
    • 1/2 cup unsalted butter at room temperature
    • 3/4 cup dark brown sugar packed
    • 1 egg
    • 1 1/2 teaspoon vanilla
    • 1 7- ounce jar of marshmallow creme
    • 1 cup milk chocolate chips plus some extra for the top.

    Instructions
     

    • Preheat the oven to 350 degrees. Line a 8x8 baking pan with parchment paper or aluminum foil leaving some on the overhang on the side to grab.
    • In a medium bowl add the flour, graham crackers, baking powder, salt, and cinnamon and mix until combined.
    • In a large bowl using a hand mixer beat the softened butter and sugar until combined.
    • Add in the egg and vanilla and mix.
    • Mix the dry ingredients into the wet until creamy.
    • Press 2/3 of the cookie dough into the baking pan.
    • Add a layer of marshmallow creme over the top, and sprinkle the chocolate in an even layer.
    • Gently press pieces of the remaining cookie dough and place them on top of the chocolate chips.
    • At this time you can sprinkle some roughly chopped graham crackers, extra chocolate chips, and even mini marshmallows on top.
    • Bake for 26-28 minutes or until golden brown and bubbly.
    • Remove from the oven and let cool completely before slicing.
