Ingredients needed for these S'mores bars

Notes
- Brown sugar: Both light brown sugar and dark will work here.
- Chocolate chips: I use milk chocolate chips but semi-sweet chocolate chips are fine to use or even chopped Hershey bars.
- Marshmallow Fluff: Sometimes called marshmallow creme!
- Graham crackers: You can either buy the crumbs or make your own with 10 graham crackers.
How to make these cookie bars

- Step 1: In a small bowl add the dry ingredients and mix.
- Step 2: In a large bowl combine butter and sugar and use an electric mixer to beat just until combined.
- Step 3: Add in the egg.
- Step 4: Beat just until creamy.

- Step 5: Add in the dry ingredients.
- Step 6: Mix until combined.
- Step 7: Press 2/3 of the cookie dough into the bottom of the pan lined with parchment paper or aluminum foil.
- Step 8: Add a layer of marshmallow cream on top.

- Step 9: Sprinkle chocolate chips on top.
- Step 10: Place the remaining cookie dough on top of the marshmallow layer, sprinkle graham cracker pieces, chocolate chips, and extra mini marshmallows bake until golden brown and bubbly.

Recipe Tips
- Allow the bars to cool completely before cutting them into squares. This will help them set properly and make it easier to slice without making a mess.
- Make sure you line your baking pan with parchment paper or foil it helps to remove them from the pan to cut.
- Use a wet knife to spread the marshmallow layer, it can be pretty sticky.
- You can make your own graham crackers crumbs by using a food processor, takes about 9 graham crackers to make one cup.

Easy S'mores Cookie Bars
Ingredients
- 1 cup all purpose flour
- 1 cup graham cracker crumbs
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter at room temperature
- 3/4 cup dark brown sugar packed
- 1 egg
- 1 1/2 teaspoon vanilla
- 1 7- ounce jar of marshmallow creme
- 1 cup milk chocolate chips plus some extra for the top.
Instructions
- Preheat the oven to 350 degrees. Line a 8x8 baking pan with parchment paper or aluminum foil leaving some on the overhang on the side to grab.
- In a medium bowl add the flour, graham crackers, baking powder, salt, and cinnamon and mix until combined.
- In a large bowl using a hand mixer beat the softened butter and sugar until combined.
- Add in the egg and vanilla and mix.
- Mix the dry ingredients into the wet until creamy.
- Press 2/3 of the cookie dough into the baking pan.
- Add a layer of marshmallow creme over the top, and sprinkle the chocolate in an even layer.
- Gently press pieces of the remaining cookie dough and place them on top of the chocolate chips.
- At this time you can sprinkle some roughly chopped graham crackers, extra chocolate chips, and even mini marshmallows on top.
- Bake for 26-28 minutes or until golden brown and bubbly.
- Remove from the oven and let cool completely before slicing.
