Chocolate Zucchini Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa
  • 1 pkg chocolate pudding 2.9 oz
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cups sugar
  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoons vanilla
  • 1 1/2 cups grated zucchini don’t peel it
  • 3/4 cup semi sweet chocolate chips
  • powdered sugar

Instructions

  • Preheat oven at 350 F. Spray a 8×5 inch pan with nonstick spray.
  • In a large bowl, stir together flour, cocoa, chocolate pudding, baking soda, baking powder and salt.
  • In a medium bowl, whisk together the sugar and eggs then add in the oil, milk and vanilla.
  • Add wet ingredients to the dry ingredients.
  • Fold in the zucchini and chocolate chips just until combined pour into loaf pan.
  • Bake for 50-60 minutes, or until toothpick comes out clean.
  • Cool for 15 minutes before removing from pan to cool completely.
  • Sprinkle with powdered sugar
