In a medium bowl whisk together the flour, baking powder, baking soda, cinnamon and salt until combined.
In a large bowl using a hand mixer mix the melted butter, brown sugar until smooth.
Add in the egg, egg yolk and vanilla mix until combined.
Add the dry ingredients into the wet and mix until combined.
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Chill the dough for 30 minutes then scoop 2 tablespoons dough balls and lightly toss them into granulated sugar.
Place onto the prepared baking sheet and bake for 9-11 minutes!
