1cupwhite onion diced
3clovesgarlic minced
3cupsrotisserie chicken cut into bite-sized pieces
1teaspoongarlic powder
1teaspoonsmoked paprika
½teaspoonred pepper flakes
1cupsmoked goudashredded
2cupscheddar cheeseshredded
1teaspoonsalt
½teaspoonblack pepper
Instructions
For The Dressing
Preheat your oven to 350 degrees.
In a small bowl add the mayo, milk and ranch seasoning and mix until combined. Set aside.
Add the diced potatoes to a large pot of water and bring to a boil. Reduce heat and boil 10-12 minutes just until fork tender. Drain and set aside.
Heat a 12 inch oven safe skillet on medium high heat and add the diced bacon, cook until crispy and remove to a plate to drain on paper towel.
Remove some of the bacon grease if you have a lot. (you want about 2 tablespoons) Add in the diced onion and saute just until soft about 2-3 minutes. Add in the minced garlic and cook another 30 seconds.
Add in the parboiled potatoes, diced chicken, cooked bacon, garlic powder, smoked paprika, red pepper flakes, ½ of the cheese and salt and pepper. Toss with the dressing until everything is coated.
Top with the remaining cheese and bake 20-25 minutes, and serve!

No oven safe skillet? Just transfer everything to a 9x13 baking dish.I like to use Yukon Gold potatoes but you can use whatever you prefer.Any combination of cheese works here.Store leftovers in an airtight container for up to 4 days.
