Preheat the oven to 350 degrees F and lightly coat a 9”x13” casserole dish with nonstick pan spray. Set aside.
In a large bowl add the cream of chicken soup with the mayonnaise, white wine, garlic powder, onion powder, curry powder, salt and pepper, mix with a spatula until sauce is combined. Add the chicken, broccoli and mix again, then add half of the cheddar cheese, mix well.
Spread into the prepared casserole dish. Top with the remaining cheddar cheese then the crushed Ritz crackers.
Bake in the 350-degree F oven for about 40-45 minutes until the casserole is hot and bubbly and the Ritz crackers are golden brown.
Serve hot over cooked white rice or egg noodles and garnish with fresh chopped parsley.
Notes
You can substitute milk for the cooking wine if you prefer alcohol free version.
The curry powder is highly recommended, but you can leave it out if you prefer.
Frozen thawed broccoli can be used as a substitute. Make sure to drain all the liquids very well before mixing it into the casserole.
