In a small bowl mix the garlic powder, paprika, thyme, salt and pepper together.
Pat the pork chops dry with paper towels and season both sides evenly.
Heat olive oil in a large skillet on medium high heat add 2-3 pork chops and sear for 2-3 minutes.
Flip the pork chops and sear another 2-3 minutes. And place them into the slow cooker. And repeat with remaining pork chops.
Add a little more olive oil if needed and add the onions. Cook for 2-3 minutes then add in the garlic and cook just until fragrant about 30 seconds.
Place the sauteed onions and garlic into the slow cooker with the pork chops.
In a medium bowl mix together the soup, gravy packet and beef broth until combined.
Pour sauce mixture over the pork chops and cook on low 6-7 hours or high 3-4 hours.
Notes
Cook on high for 2.5 to 3 hours for a firmer texture similar to chicken breast, or low for 6-7 hours for a more tender, "pulled" texture. I highly recommend using thicker chops (about 1 inch) they are ideal for slow cooking; thinner ones can become dry more easily.Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
