Cowboy cookies are thick and chewy loaded with oats, chocolate chips pecans, and coconut. Whether enjoyed fresh out of the oven or paired with a glass of milk, these homemade cookies are sure to satisfy your sweet cravings.

In a medium mixing bowl add the flour, baking soda and cinnamon and whisk.
In a large bowl add the butter and brown sugar and cream together. Add in the eggs and vanilla and mix until combined.
Add in the flour mixture and mix just until combined.
Fold in 1 1/2 cup of chocolate chips, oats, coconut and pecans
Cover and chill the dough for 1 hour.
Preheat the oven to 350 degrees
Scoop 3 tablespoons of cookie dough and form into a ball, place on a baking sheet lined with parchment paper or a baking mat.
Gently press the dough balls to flatten just a bit then add a few of the extra chocolate chips on top of each cookie.
Bake for 13-15 minutes the cookies will continue to bake a bit once removed from the oven.
Once cooled transfer them to a cooling rack, enjoy!
Notes
Measure your flour properly by spooning it into the measuring cup.Chilling the dough is important as it prevents the cookies from spreading too much.Add some additional chocolate chips on top before baking.Don't overbake, remove them from the oven before they are all the way done. They will finish baking on the cookie sheet.
