Spray a 9x13 baking pan with non stick cooking spray.
In a large bowl add eggs, milk,paprika, salt and mix until combined.
Cut the french bread into small 1 inch cubes and place them in the baking dish.
Layer the diced ham, red peppers and cheese on top of the bread.
Pour the egg mixture evenly over the ingredients into the casserole, cover with plastic wrap and place in the refrigerator overnight.
Preheat the oven to 375 degrees remove the plastic wrap and place the casserole into the oven.
Bake for 30 minutes, then cover the casserole with aluminium foil to prevent it getting too brown. and bake for another 20-25 minutes.
Remove from the oven and let cool 5 minutes garnish with green onions and serve!

Any crusty bread will work great like sourdough, french, baguette, or even my Artisan Bread.I used gouda and cheddar but you can use whatever cheese you love.I don't recommend preparing this breakfast casserole more than a day or so ahead of time. Leaving it in the fridge overnight allows the egg and milk mixture to soak into all of the bread, but if it's left for too long it could make the casserole soggy.Freezing: Prepare casserole and cover with plastic wrap and aluminum foil and freeze for up to 3 months. Allow to thaw overnight in the refrigerator. Bring to room temperature for about 30 minutes then bake.
