Instructions
In a bowl mix the stone ground mustard, Dijon mustard,honey, lemon juice, garlic powder, paprika and salt together well.
Reserve about ½-¾ cup of this honey mustard mixture for a sauce garnish, then add the chicken to the remaining and coat well. Cover with plastic and refrigerate for at least 30 minutes, or overnight.
Preheat the grill to 400 degrees F. If desired, rub some canola or vegetable oil on the grill grates before heating.
Reduce the temperature to medium high heat and place the chicken on the grill.
Baste the chicken pieces with the marinade every 1-2 minutes, while cooking. Cook for about 5 to 8 minutes per side, until the chicken reaches an internal temperature of 165 degrees.
Remove the cooked chicken and allow it to rest for 5-10 minutes.
Serve with your favorite side or salad and the remaining honey mustard sauce.
Notes
Marinate longer for stronger flavor: While 30 minutes adds flavor quickly, marinating the chicken overnight gives the honey mustard mixture more time to penetrate the meat for a deeper flavor.
Reserving some sauce before marinating allows you to offer drizzling over the grilled chicken right before serving adds fresh flavor and extra moisture to the finished dish.
Substitute for outdoor grill: This recipe can be made by cooking the marinated chicken in a grill pan over medium /medium plus heat on the stove.
