white onion

or stock

cans cannellini beans
drained

fresh spinach

heavy cream
Instructions
Heat olive oil in a large pot on medium high heat and add the onion and carrots saute for 3-4 minutes.
Add in the Italian sausage and cook until browned breaking it apart as it cooks.
Add in the minced garlic and cook just until fragrant.
Sprinkle in the flour and cook for 1-2 minutes.
Add in the chicken broth and potatoes, and let it come to a low boil. Cook for 10-15 minutes or until the potatoes are tender.
Add in the beans and spinach and simmer for 2-3 minutes.
Reduce the heat to medium low and add in the heavy cream.
Add more salt and pepper to taste and serve!
Notes
Frozen spinach can be used in place of fresh.
Store leftovers in an airtight container in the refrigerator for 3-4 days.
