This comforting and hearty marry me chicken pasta is made in one pot for a quick and convenient meal that requires very little clean up!

1(8 ounce)jar julienne cut sun-dried tomatoesdrained well

½cupwhite cooking wine
1cuporzouncooked
2cupschicken broth
½cupheavy cream
2packed cups baby spinachrough chopped
½cupParmesan cheeseshredded plus more for garnish
Instructions
In a medium bowl add chicken thighs with 1 tablespoon olive oil, kosher salt, black pepper, garlic powder and paprika then top to combine.
In a large skillet, heat the remaining tablespoon of olive oil over medium high heat. Add the seasoned chicken piece to the hot oil and cook for about 3-4 minutes, stirring occasionally.
Add the sun-dried tomatoes, basil, oregano and paprika to the skillet and stir to combine, cook for about 3 more minutes stirring occasionally.
Add the minced garlic, cook for about 1 minute. Add the white wine and cook for about another minute.
Add the uncooked orzo pasta and stir to combine, finally add the chicken stock and then bring to a boil. Reduce to a simmer, cover and cook for 10-12 minutes stirring throughout to prevent the orzo from sticking.
Once the orzo is cooked add the cream, and Parmesan cheese. Stir and turn off the heat. Tear the baby spinach and add to the orzo, slowly stirring in, allowing the residual heat of the pasta to help wilt the spinach.
Top with additional shredded parmesan cheese and serve.
Notes
What can I use instead of white cooking wine? Additional chicken broth is the easiest and simplest substitute.
Refrigerate leftovers in an airtight container for up to 4 days after cooking.
