Olive Garden Herb Grilled Salmon is a perfect combination of tender salmon fillets seared to perfection with a blend of Italian herbs and garlic. This easy-to-make recipe comes together in 20 minutes making it a quick and easy weeknight meal.
In a small bowl mix the butter, parsley, garlic, lemon zest and salt until combined.
Place the butter mixture on a piece of plastic wrap and roll and twist the ends, chill in the freezer for 3-5 minutes.
Pat dry the salmon filets with a paper towel and season the filets with salt and Italian seasonings evenly.
Heat a cast iron skillet on medium-high heat and add the olive oil. Place the salmon flesh side down into the skillet, and cook for 3-4 minutes.
Gently flip the salmon filets and place a slice of the herb butter on top of the salmon to melt cook another 2-3 minutes or until the internal temperature reaches 130 degrees.
Serve with extra herb butter, fresh chopped parsley and lemon slices.

Atlantic or wild-caught salmon with the skin on.The best pan is a cast-iron skillet or stainless steel pan as it conducts heat evenly. A nonstick skillet will work too but it doesn't get as hot so the skin won't get as crispy.Use a meat thermometer to know when the salmon has reached 125-130 degrees for medium or 145 degrees for well done.
