1 to 1.5poundss shaved beef (large pieces cut down)
1cupyellow onionsliced thin (approximately ½ of a large white onion)
1cupgreen peppersliced thin (approximately one medium-sized pepper)
112 countpackage of Hawaiian slider rolls
6slicesAmerican Cheesetorn into pieces
6slicesProvolone Cheese
2tablespoonunsalted buttermelted
2tablespoonEverything Bagel Seasoning
Instructions
In a large skillet over medium/medium-high* heat, oil and shave the beef, and cook for about 5-8 minutes until the meat is no longer pink.
Add the onions and peppers to the cooked meat and cook for about 4 minutes until they begin to soften.
a. If moisture collects during the cooking process, drain the meat/onions mixture. Add the meat mixture back to the pan after draining. (see note)
Add the slices of American Cheese to the meat/onion/peppers and mix so it starts to melt. Turn off the heat and set the meat mixture aside.
Carefully cut the slider rolls in half horizontally, keeping them intact so that you have tops and bottoms.
Place them cut side up on a large/wide sheet pan and lightly toast under the broiler for about 2 minutes. Remove from the oven once toasted.
Change the oven temperature to 350 degrees. Spray a casserole dish with non-stick cooking spray.
Place the bottom of the toasted slider rolls into the prepared dish.
Place the six slices of the provolone cheese on the bottom layer of rolls, overlapping if necessary.
Top with the cooked meat mixture. Bake in the preheated oven for 5 minutes.
Remove the casserole after 5 minutes and gently place the toasted top slider rolls.
Brush the tops with the melted butter, then generously sprinkle them with the Everything Bagel seasoning.
Return the casserole to the oven to bake for an additional 5-8 minutes.
Serve individual sliders while still warm.

Notes
You can buy beef already shaved in the meat dept, or grab a rib eye and cut it into really thin pieces.
You can also grab some shaved roast beef from the deli, and just toss it into the peppers and onions after they have cooked.
Swiss, mozzarella, or American cheese all work well. Just choose a cheese that melts smoothly for the best results.
Wrap leftovers with plastic wrap or store them in an airtight container and refrigerate for up to 3 days after cooking. Reheat in the microwave at 50-60% power for 1-2 minutes until warmed all the way through.
