Preheat the oven to 400 degrees and spray muffin tin with non stick cooking spray.
Heat a large skillet on medium high heat and add the sausage breaking up with a spoon until browned and cooked through. Remove the sausage to a plate lined with a paper towel to drain. Set the skillet aside for now.
In a large mixing bowl add the flour, baking powder and salt and whisk until combined.
Add the sausage, shredded cheese to the flour mixture and mix.
In a medium bowl add milk, egg, maple syrup and melted butter and whisk until combined.
Pour the egg mixture into the flour mixture and mix until everything is incorporated.
Scoop the batter into the muffin tins evenly. Bake for 18-20 minutes or until a toothpick comes out clean. Brush the tops with more maple syrup if you'd like..
For The Gravy
Heat the same skillet you made the sausage in on medium-high heat and add the butter. Once melted, add in the flour and whisk until smooth, 1-2 minutes.
Pour in half of the milk, whisk, and then pour in the other half and whisk. Bring to a low simmer for 3-4 minutes or until thickened.
Serve muffins with a side of gravy!
