Golden, flaky Sausage Rolls with Honey Mustard Sauce are easy to make and enjoy as an appetizer, snack, or serve at a party. A savory sausage mixture gets wrapped in buttery puff pastry and baked until golden brown.

Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
In a medium bowl, add the sausage, onion, garlic, 1 egg, bread crumbs, parmesan cheese, mustard, Italian seasoning, salt, and pepper.
Divide the sausage into 6 equal balls and set aside.
Gently roll out one sheet of the puff pastry, you may need to lightly flour the surface to prevent sticking. Using a pizza cutter or knife cut the sheet into thirds.
Using your hands, rolls three of the sausage balls into logs the same length as your puff pastry. (See photos above in post)
Place each log onto the puff pastry strip getting it right to the edge.
Roll the puff pastry around and press the seams together and place them seam side down.
Cut each log into 6 pieces about 2 inches each.
Diagonally cut two slits into the dough for each piece to vent.
Place the sausage rolls onto the baking sheet. And repeat with the remaining puff pastry and sausage.
Whisk together the remaining egg with 1 tablespoon of water and brush the egg wash over the top of the rolls.
Bake for 20-22 minutes or until puff pastry is golden brown.
While the sausage rolls are baking mix together the honey mustard sauce in a small bowl, add salt and pepper to taste. Place in the fridge until ready to serve.
Notes
Remove your puff pastry and let thaw at room temperature. Or I recommend thawing in the refrigerator overnight. The pastry dough needs to be fully thawed or else it will break.Any Italian sausage will work I like to use spicy.Make ahead: Refrigerate assembled and unbaked sausage rolls (without the egg wash on top) for up to 24 hours. You may have to add a couple extra minutes if they are straight from the fridge.Air fryer: Preheat air fryer to 400 degrees air fry sausage rolls for 15-20 minutes.
