Ingredients

1 can cream of celery soup
1 cup milk
1 tablespoon cornstarch
2 ½ pounds red potatoes cut into 1 inch cubes
½ white onion diced
1 ½ cups fully cooked cubed ham
3 cloves garlic minced
6 ounces Velvetta cheese cubed

Instructions

In a small bowl add the canned soup, milk and cornstarch, whisk until combined.
Add the remaining ingredients to a 6-7 qt slow cooker, pour the sauce over the potatoes and give it a stir so it’s all coated.
Cook on low for 5-6 hours or until potatoes are fork tender.
Garnish with fresh chopped parsley and serve!

Notes

You can also use Yukon gold no need to peel them.
