In a large saute pan or pot with a lid add butter and rice and garlic. Cook over medium heat until garlic is fragrant about 2 minutes.
Add chicken stock or water, cover pot, and bring to a simmer. Reduce heat to low and cook until the rice has absorbed all of the water about 20-25 minutes or until liquid is absorbed.
Remove from heat and fluff with a fork, stir in lime juice and salt add more of each if desired. Add cilantro toss and serve.
