Country Breakfast Sausage

This classic country breakfast sausage is made with ground pork, fresh herbs, and spices and is better than any store-bought version.

Ingredients

  • 2 tablespoons fresh sage
  • 2 tablespoons fresh thyme
  • 2 teaspoons fresh rosemary
  • 4 cloves garlic minced
  • 2 teaspoons salt
  • 1 ½ tablespoons brown sugar
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • ¼ teaspoon red pepper flakes optional
  • 2 pounds ground pork

Instructions

  • 1. In a small bowl add all the seasoning and mix until combined.
  • 2. In a large bowl add the ground pork, and spice mixture and mix well with your hands until combined.
  • 3. Divide the pork into 15 balls then shape it into patties. Gently press your thumb into the center to form a little dent. This will give you a nice even patty once it's cooked.
  • 4. Heat a large skillet on medium heat place a few patties in the skillet and cook for 4-5 minutes then flip and cook another 4-5 minutes or until internal temperature reaches 160 degrees.
  • 5. Serve and enjoy!

Notes

  • Ground Pork- I don't recommend using lean ground pork you need a little more fat to prevent dryness.
  • If you have a meat grinder attachment, you can literally grind your own sausage, using a pork shoulder.
  • Change up the sausage seasoning spice combinations each time you make it. Super simple and a fun way to make different kinds of recipes fast.
  • To Freeze-You can freeze it before you cook it, or after you cook it as well! Wrap each patty in a piece of plastic wrap and place it in a ziplock freezer bag. Thaw in the refrigerator overnight and cook or reheat as directed
