Apple Pie Bars are the perfect fall dessert featuring a homemade sweet with a cinnamon apple filling and is drizzled with a simple powdered sugar glaze.
7cupsapplepeeled and thinly sliced (I used fuji apples)
2/3cupgranulated sugar
¼cupall purpose flour
1teaspooncinnamon
1/4teaspoonnutmeg
For The Crust
2 ½cupsall purpose flour
2tablespoonsgranulated sugar
½teaspoonsalt
1cupbuttercold cut into tiny pieces
2eggsyolks and whites separated
½cupmilk
For The Glaze
1 ½cupspowdered sugar
3-4tablespoonsmilk
Instructions
Preheat the oven to 350 degrees, lightly butter and flour a Jelly roll pan or 9x13 baking dish.
In a large bowl add the sliced apples, granulated sugar, flour, cinnamon and nutmeg and toss until coated and set aside.
In a large bowl add the flour, sugar, and salt and whisk. Using a pastry cutter or your fingers and mix in the cold butter until combined. Using a fork mix in the egg yolks and milk and mix until the crust comes together.
Place the dough on a well floured cutting board and form the dough into a ball. You should be able to see small bits of butter throughout. Cut the dough into two equal dough balls.
Flour the cutting board and roll out one of the dough balls, if it gets sticky sprinkle a bit more flour on top.. Place the crust into the prepared pan and press the dough out to cover the pan.
Brush a light coating of the egg whites on top of the crust.
Add the sliced apples on top and spread them out as evenly as possible.
Roll the second pie dough ball out onto the floured cutting board and place on top of the sliced apples.
Brush another light coating of egg whites on top of the pie crust. (you won’t use it all)
Place on the center rack and bake for 35-40 minutes or until golden brown, remove from the oven to cool.
In a small bowl mix the glaze together and set aside.
When the apple pie bars are cooled a bit spread the glaze on top, cut and serve!
Notes
You can use whatever apples you prefer. You can also use 4 cups of apple pie filling.The crust can be a little sticky to work with, you can chill it in the fridge for an hour if you want. It doesn't have to be perfect if some breaks off just patch in the holes.If you dont have a jelly roll pan you can use a cookie sheet press your dough out to about 15x10 in size.
