Ingredients needed
- Apples: Any kind of appls works great in this recipe or use a can of apple pie filling.
- Sugar: granulated for the filling and the crust. Powdered sugar for the glaze.
- All purpose flour: To thicken the filling and the crust.
- Spices: Cinnamon, nutmeg, and salt
- Butter: Keep it cold and cut it into tiny pieces so it works into the crust dough easier.
- Eggs: Yolks and whites separated.
- Milk: For the glaze and the crust.
How to make apple pie bars
- Step 1: In a large mixing bowl, add sliced apples, sugar, flour, cinnamon and nutmeg. Toss together with tongs and set aside.
- Step 2: In a separate large bowl, add flour, sugar, salt and whisk together. Add slices of cold butter and use either your fingers or a pastry cutter to mix in the butter.
- Step 3: Once butter is mixed in well, add egg yolks and milk. Mix together until you start to form a crust.
- Step 4: Once the crust dough starts to form, lightly flour your work surface on a cutting board and place the dough ball on it. Split into two equal balls of dough.
- Step 5: Lightly flour work surface if needed, and use a rolling pin to roll out one of the balls of dough. Add a bit of flour to the top if it's too sticky.
- Step 6: Lightly flour and butter your pan. Transfer the crust into the pan and use your fingers to press it down to cover the pan.
- Step 7: Use a pastry brush to coat the crust with egg whites.
- Step 8: Transfer the apple mixture and spread out on top of the crust.
- Step 9: Roll out the other dough ball and carefully transfer on top of the apple filling. Brush this second crust with egg whites as well.
- Step 10: Bake until golden brown.
- Step 11: Mix the powdered sugar and milk together in a small bowl to make the glaze.
- Step 12: Remove baked dessert from the oven, let cool a bit and spread the glaze all over. Cut into bars, serve, and enjoy!
Recipe Tips
- It can be helpful to line the bottom of the pan with parchment paper if you don't want to grease it.
- I recommend using a jelly roll pan. but a 9x13 baking dish can also be used.
- When working your dough, you still want to see small bits of butter throughout. The bits of butter help make this a flaky crust as the butter makes little steam pockets in the dough as it bakes.

For The Filling
- 7 cups apple peeled and thinly sliced (I used fuji apples)
- 2/3 cup granulated sugar
- ยผ cup all purpose flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
For The Crust
- 2 ยฝ cups all purpose flour
- 2 tablespoons granulated sugar
- ยฝ teaspoon salt
- 1 cup butter cold cut into tiny pieces
- 2 eggs yolks and whites separated
- ยฝ cup milk
For The Glaze
- 1 ยฝ cups powdered sugar
- 3-4 tablespoons milk
Instructions
- Preheat the oven to 350 degrees, lightly butter and flour a Jelly roll pan or 9x13 baking dish.
- In a large bowl add the sliced apples, granulated sugar, flour, cinnamon and nutmeg and toss until coated and set aside.
- In a large bowl add the flour, sugar, and salt and whisk. Using a pastry cutter or your fingers and mix in the cold butter until combined. Using a fork mix in the egg yolks and milk and mix until the crust comes together.
- Place the dough on a well floured cutting board and form the dough into a ball. You should be able to see small bits of butter throughout. Cut the dough into two equal dough balls.
- Flour the cutting board and roll out one of the dough balls, if it gets sticky sprinkle a bit more flour on top.. Place the crust into the prepared pan and press the dough out to cover the pan.
- Brush a light coating of the egg whites on top of the crust.
- Add the sliced apples on top and spread them out as evenly as possible.
- Roll the second pie dough ball out onto the floured cutting board and place on top of the sliced apples.
- Brush another light coating of egg whites on top of the pie crust. (you wonโt use it all)
- Place on the center rack and bake for 35-40 minutes or until golden brown, remove from the oven to cool.
- In a small bowl mix the glaze together and set aside.
- When the apple pie bars are cooled a bit spread the glaze on top, cut and serve!

Iโve been making this recipe since the mid 70โs. Making dough just takes so much time that I started using store bought pie dough. Tastes just as good to me. Itโs my once a year (fall) dessert. My recipe also called for adding 1C crushed corn flakes on top of the bottom crust.
