Preheat the oven to 375 degrees. Spray two muffin tins with nonstick cooking spray.
Place the biscuits on a cutting board and cut each biscuit in half. Press out the biscuit dough and press each one into a muffin tin to form cups and set aside.
Heat a large skillet on medium high heat and add the ground beef and onions and cook until browned. Add in the minced garlic and cook another 30 seconds just until fragrant.
Add in the ketchup, mustard salt and pepper until combined, turn off the heat.
Place one cheese cube into each biscuit cup and scoop about 2 tablespoons of the meat mixture into each cup, gently packing it in. Bake for 6-7 minutes.
Remove the cheeseburger cups from the oven and press another cheese cube into each cup and place back into the oven and bake another 7-8 minutes or until golden brown.
Remove from the oven and allow them to cool for 5 minutes then remove them from the tins.
Serve and top them with dill pickles, diced onions and shredded lettuce.
Notes
I get my American cheese from the deli but you can also use Velveeta or cheddar cheese cubes if you prefer.
Store leftovers in an airtight container in the refrigerator for 3-4 days.
Can these be prepped ahead of time? Sure can! Follow the recipe and wrap your muffin tin with aluminium foil and place into the refrigerator until ready to bake.
