Cut the banana into 1/2 inch slices and set aside.
In a large bowl, add the bananas, brown sugar, vanilla, cinnamon, and nutmeg and stir until the bananas are well coated. Set aside.
Preheat the oven to 350 degrees place the butter into a 12 inch skillet or baking dish and put the dish in the oven while its preheating to melt the butter.
While the butter is melting, get a large bowl and add the flour, sugar, baking powder, salt and milk, whisk until combined.
Once the butter is melted, remove the skillet/baking dish from the oven and pour the batter into the pan ( the butter will come over the edges of the batter and that's ok).
Spoon the banana mixture evenly over the batter. Do NOT stir!
Bake for 40-45 minutes. Let rest 10 minutes and serve with ice cream, whipped cream or a drizzle of caramel sauce.
Notes
You want to have extra ripe bananas for optimal sweetness.
If you like a little texture, sprinkle chopped pecans or walnuts on top before baking.
