Preheat the oven to 425 degrees line a baking sheet with parchment paper or a baking mat. You can also lightly spray the baking sheet with nonstick cookng spray.
Roll out the pizza dough into a large rectangle, you will have to press it out with your fingers or use a rolling pin to even it out.
Spread 1/2 cup pizza sauce evenly over the dough, leaving about a 1 inch strip free of sauce. Sprinkle the minced garlic on top.
Place the cheese slices (or shredded cheese) on the dough followed by the pepperoni slices, and sprinkle 2 tablespoons of the parmesan cheese over the pepperoni slices.
Starting from the long side with the sauce roll the dough into a log. Go slow keeping it as tight as you can. Once the dough is rolled into a log pinch the dough closed.
Using a sharp knife cut the dough in half, then cut each half in half again. Once you have 4 sections cut those sections into 3 slices.
Place the slices onto the prepared baking sheet making sure the edges are pinched well on each pinwheel.
Bake for 12-15 minutes or until golden brown.
Sprinkle remaining parmesan cheese on top and serve with remaining pizza sauce.
Notes
Make sure you pinch the dough closed on the log. Then after they are sliced and placed onto the baking sheet double check to make sure they are pinched.
