Wash the potatoes thoroughly and pat them dry with a kitchen towel. Cut each potato into wedges. You can leave the skin on for added texture and flavor.
Drizzle the olive oil over the potato wedges in a large bowl. Sprinkle the garlic powder, paprika, onion powder, dried oregano, salt, and black pepper evenly over the potatoes. Toss the potato wedges in the bowl until they are evenly coated with the olive oil and seasonings.
Lightly spray the air fryer basket with cooking spray to prevent sticking.
Arrange the seasoned potato wedges in a single layer in the air fryer basket. You may need to cook them in batches, depending on the size of your air fryer. Do not overcrowd.
Cook the potato wedges at 400°F for 12-16 minutes, flipping them halfway through. The cooking time may vary depending on your air fryer, so check for doneness. They should be golden brown and crispy on the outside and tender on the inside.
Once cooked, remove the potato wedges from the air fryer and let them cool for a minute. Serve them hot with your favorite dipping sauce.

Cook in batches. Don't overcrowd the basket. Only place in a single layer when cooking the seasoned wedges.
Store leftover potato wedges in a ziptop bag or airtight container in the refrigerator for up to 2-3 days.
Reheat potato wedges using the Air Fryer. Ditch the microwave, they'll turn out mushy or soggy, not nice and crispy.
Oven Bake: Place the potato wedges on a baking sheet and place in a preheated 400 degree oven. Bake for 25 minutes then flip and bake another 10 minutes or until crispy.
To Freeze: Flash Freeze these cooked potato wedges on a baking sheet for 1-2 hours. Transfer them to a freezer-safe bag or container before freezing for up to 2-3 months.
