  • Potatoes: I used Yukon gold potatoes, but you could use red potatoes or even russet potatoes. 
  • Bacon: you can use thick-cut bacon, regular bacon, or even turkey bacon.
  • Onion: White or yellow.
  • Garlic: Fresh minced is always recommended.
  • Chicken: rotisserie chicken or leftover chicken.
  • Herbs and spices: garlic powder, smoked paprika, red pepper flakes, salt, and black pepper
  • Cheese: shredded smoked Gouda and shredded cheddar cheese

How To Make Chicken Bacon Ranch Potato Casserole

  • Step 1: Dice the potatoes and add them to a large pot of water. Bring to a boil and cook potatoes until fork-tender. 
  • Step 2: Add diced bacon to a skillet and cook until crispy. Remove cooked bacon from the skillet and drain on paper towels. 
  • Step 3: Remove some of the grease from the but leave some, and cook diced onions in it. Add minced garlic and cook a little longer. 
  • Step 4: Add mayo, milk, and ranch seasoning to a small bowl and mix to combine.

  • Step 5: Add the potatoes, diced chicken, bacon, spices, and half the cheese altogether in your oven-safe skillet. Toss to coat everything with the dressing. 
  • Step 6: Top the casserole with the rest of the cheese and bake in the oven.

Ingredients
  

  • 1 cup mayonnaise
  • 1 cup whole milk
  • 1 packet Ranch seasoning mix or 2 tablespoons
  • 2.5 pounds yellow or red potatoes cut into bit sized pieces
  • 8 slices bacon cut into bite sized pieces
  • 1 cup white onion diced
  • 3 cloves garlic minced
  • 3 cups rotisserie chicken cut into bite sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon red pepper flakes
  • 1 cup smoked gouda shredded
  • 2 cups cheddar cheese shredded
  • 1 teaspoon salt
  • ยฝ teaspoon black pepper

Instructions
 

For The Dressing

  • In a small bowl add the mayo, milk and ranch seasoning and mix until combined. Set aside.
  • Add the diced potatoes to a large pot of water and bring to a boil. Reduce heat and boil 10-12 minutes just until fork tender. Drain and set aside.
  • Heat a 12 inch oven safe skillet on medium high heat and add the diced bacon, cook until crispy and remove to a plate to drain on paper towel.
  • Remove some of the bacon grease if you have a lot. (you want about 2 tablespoons) Add in the diced onion and saute just until soft about 2-3 minutes. Add in the minced garlic and cook another 30 seconds.
  • Add in the parboiled potatoes, diced chicken, cooked bacon, garlic powder, smoked paprika, red pepper flakes, ยฝ of the cheese and salt and pepper. Toss with the dressing until everything is coated.
  • Top with the remaining cheese and bake 20-25 minutes, and serve!

Notes

No oven safe skillet? Just transfer everything to a 9x13 baking dish.
I like to use Yukon Gold potatoes but you can use whatever you prefer.
Any combination of cheese works here.
Store leftoversย in anย airtight containerย for up to 4 days.ย
