Chicken Bacon Ranch Potato Casserole
Ingredients
- 1 cup mayonnaise
- 1 cup whole milk
- 1 packet Ranch seasoning mix or 2 tablespoons
- 2.5 pounds yellow or red potatoes cut into bit sized pieces
- 8 slices bacon cut into bite sized pieces
- 1 cup white onion diced
- 3 cloves garlic minced
- 3 cups rotisserie chicken cut into bite sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ยฝ teaspoon red pepper flakes
- 1 cup smoked gouda shredded
- 2 cups cheddar cheese shredded
- 1 teaspoon salt
- ยฝ teaspoon black pepper
Instructions
For The Dressing
- In a small bowl add the mayo, milk and ranch seasoning and mix until combined. Set aside.
- Add the diced potatoes to a large pot of water and bring to a boil. Reduce heat and boil 10-12 minutes just until fork tender. Drain and set aside.
- Heat a 12 inch oven safe skillet on medium high heat and add the diced bacon, cook until crispy and remove to a plate to drain on paper towel.
- Remove some of the bacon grease if you have a lot. (you want about 2 tablespoons) Add in the diced onion and saute just until soft about 2-3 minutes. Add in the minced garlic and cook another 30 seconds.
- Add in the parboiled potatoes, diced chicken, cooked bacon, garlic powder, smoked paprika, red pepper flakes, ยฝ of the cheese and salt and pepper. Toss with the dressing until everything is coated.
- Top with the remaining cheese and bake 20-25 minutes, and serve!
