    Bacon Ranch Foil-Wrapped Potatoes are tender potatoes, loaded with bacon, onions, peppers and melty cheese a perfect side dish to any meal!

    These bacon ranch foil-wrapped potatoes are one of the easiest side dishes. Using simple ingredients and easy cleanup like my Foil Wrapped BBQ Chicken Nachos.You'll be amazed at how quickly these are devoured, cheesy summer comfort food at its best!

    The best part of these cheesy ranch potatoes is you toss these on the grill with the main course. In about 30 minutes you have tender delicious, cheesy potatoes that go perfectly with my Grilled Teriyaki Steak or Grilled Soy Sauce Chicken, and clean-up is a breeze! An effortless summer side dish that you can prepare ahead of time, absolutely perfect for your next camping trip.

    Ingredients needed for theses foil wrapped potatoes

    All the ingredients needed for these bacon ranch potatoes.

    Ingredient Notes

    • Potatoes: I use a mixture of Yukon gold and Red potatoes but Russet potatoes also work.
    • Olive oil: melted butter can be used instead.
    • Ranch: You want to use the ranch seasoning in the package.
    • Cheese: I use pepper jack and cheddar, but you can use whatever you prefer.
    • Bacon: I like to use thick-cut smokey bacon.

    How to make these cheesy bacon ranch potatoes

    Diced potatoes and veggies in a bowl then some placed on a piece of aluminum foil.
    • Step 1: In a large bowl add the potatoes, onions, peppers, garlic, ranch, and olive oil and toss until combined.
    • Step 2:  Place equal portions of potatoes onto a pieces of aluminum foil.
    Potatoes that have been wrapped in a foil packet and placed on a baking sheet.
    • Step 3: Fold the sides of the foil sheets up and then the ends.
    • Step 4: Place the foil packets on a baking sheet if you are baking or straight on the grill with medium heat.
    Foile wrapped potatoes have been cooked then opened and cheese and bacon added in to melt.
    • Step 5: Open the foil packets and add in the shredded cheese and bacon on top of the potatoes place back in the oven or grill and melt the cheese.
    • Step 6: Remove from the oven or grill and top with sour cream and fresh parsley.

    Recipe tips

    • I use Yukon gold creamer potatoes, but Russet or red-skinned potatoes will also work.
    • Cutting the potatoes the same size will ensure even cooking.
    • We prefer a mixture of pepper jack and cheddar cheese. You can use whatever cheese you prefer.
    • Spraying the foil with cooking spray helps prevent any sticking.

    Can these be made ahead of time?

    Of course I just prep everything and divide the potato mixture into the foil and place the potato foil packs on a sheet pan in the refrigerator until ready to grill or bake.

    Can these be made in the oven?

    Yes, Preheat the oven to 425 degrees and place foil-wrapped potato packets on a baking sheet. Place baking sheet in the center rack and bake for 30 minutes or until fork-tender. Open foil packets and place cheese on top and bake another 5 minutes or until melted.

    Can I add meat to these foil packets for a main dish?

    Yes, you can make foil-packet meals! Add in some diced chicken breasts, and make sure they are cut small enough so they c

    Ingredients
      

    • 1 1/2 lbs small yukon gold potatoes quartered
    • 3 cloves garlic minced
    • 2 Jalapenos seeded and cut into slices
    • 1/2 cup onion diced
    • 1/2 cup red peppers diced
    • 2 tablespoons ranch dip mix
    • 1 tablespoon olive oil
    • 5-6 slices cooked bacon coarsely chopped
    • 1 1/2 cups shredded cheese
    • salt and pepper to taste
    • Fresh parsley
    • Sour cream optional

    Instructions
     

    • In a large bowl add potatoes, olive oil, onions, pepper, garlic, jalapenos and sprinkle the ranch dip mix and toss until combined.
    • Spray non-stick spray on foil sheets (I usually do 3) divide the potatoes evenly among the foil sheets. Fold the edges of the foil over the potatoes to form a packet.
    • Place packs on grill over medium heat. Cover and cook 15 minutes, rotate, and cook another 15 minutes or until fork-tender.
    • Gently open packs and sprinkle cheese and bacon over potatoes. Cover the grill and wait 2-3 minutes until the cheese has melted.
    • Remove from grill and garnish with sour cream and fresh chopped parsley.
