  • Cake Flour: All purpose flour or whole wheat flour also work fine, but cake flour results in super cakey and fluffy waffles.
  • Baking Powder & Salt
  • Eggs: Room temperature is always recommended.
  • Whole Milk: Feel free to use another kind of milk, or a non-dairy option like almond milk or oat milk.
  • Butter: Both salted and unsalted will work.
  • Ripe Bananas: The riper the bananas are, the sweeter they'll be and the easier they'll be to mash.
  • Maple Syrup: Great as a topping, the waffle batter also has maple syrup baked right in!
  • Vanilla Extract: For some extra sweetness.

How to Make Banana Waffles

  • Step 1: Combine dry ingredients (flour, salt, baking powder) in a large bowl.
  • Step 2: In a separate bowl, combine milk, eggs, melted butter, mashed bananas, syrup, and vanilla extract.
  • Step 3: Stir the wet ingredients into the mixing bowl with the dry ingredients and fold together until mostly smooth (some lumps are okay).
  • Step 4: Spray a waffle maker with non stick spray or vegetable oil and pour in about a cup of homemade waffle batter, using a spoon or spatula to spread the batter evenly. Cook until golden brown then serve.

  • If you're making lots of waffles at once, keep cooked waffles in a 200 degree oven to keep them hot and crisp on the outside. Place them on a baking sheet lined with aluminum foil or parchment paper, or keep them on an oven-safe wire rack.
  • I recommend using cake flour for these waffles as all purpose flour won't give you the same results. If you don't have cake flour, make your own by removing 2 tablespoons from each cup of flour and replacing them with some cornstarch.
  • You can also give the waffles a dusting of cinnamon or powdered sugar.
  • Overripe bananas are best for any baked recipes--the riper they get the sweeter they'll be.
  • Keep leftover waffles in the fridge an airtight container or wrapped tightly in plastic wrap for 2 to 3 days. Reheat them in the oven for best results.

The two types of batter contain essentially the same ingredients but in different ratios. Waffle batter tends to be higher in fat with more butter and eggs for a super rich result.

What is the trick to making good homemade waffles?

Be sure to let the waffle iron heat up properly and grease it well to prevent sticking for best results. Don't overfill the iron either, and don't overcook the waffles.

Why are my homemade waffles not crispy?

Not waiting until your waffle iron is nice and hot will cause your waffles to not have that crispy exterior. Stacking them on top of each other after cooked will cause them to lose their crispiness.

  • 2 cups cake flour spooned and leveled
  • 4 teaspoons baking powder
  • ยฝ teaspoon salt
  • 3 large eggs room temperature, lightly beaten
  • 1 cup whole milk room temperature or slightly warmed
  • ยฝ cup unsalted butter melted and cooled
  • 2 ripe bananas mashed (about 1 cup)
  • 1 Tablespoon maple syrup
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat waffle iron.
  • Whisk to combine flour, baking powder, and salt in a large bowl.
  • Combine eggs, milk, melted butter, mashed bananas, maple syrup, and vanilla extract in a medium bowl. If milk is not at room temperature, heat it in the microwave for about 30 seconds before adding.
  • Stir wet ingredients into dry ingredients until just combined. There will be a few lumps remaining, but do not over-stir.
  • Spray the waffle iron with non-stick cooking spray or brush it with vegetable oil to prevent sticking according to your waffle iron instructions. Pour batter into the center of the waffle iron and spread to the edges with the back of a spoon or spatula. Use approximately 1 cup of batter for a large Belgian waffle iron. Cook until golden brown.
  • Serve immediately or place waffles on top of a wire rack in a single layer in a 200-degree oven with the door slightly open to keep them warm and crisp until ready to serve.

Notes

  • All-purpose flour will not give the best results. Cake flour can be made from scratch from all-purpose flour by removing 2 tablespoons of flour from each cup, replacing it with 2 tablespoons of cornstarch, then whisking it together.
