Easy casserole recipes like the Ultimate Chicken Casserole or a Classic Tuna Casserole are always a hit in my house. I love a good, simple dinner to toss together that I know everybody will be reaching for seconds with. This pure comfort food dish has quickly become the new family favorite!

Casseroles are great at feeding a bigger crowd and fast enough for those busy weeknight dinners when you need something to feed the entire family. It's a comforting recipe made from simple ingredients that even the pickiest of eaters will enjoy. 

Ingredients

All the ingredients needed for this casserole.
  • Cream of chicken soup: Cream of celery or mushroom will also work.
  • Dairy: Sour cream, milk, melted butter.
  • Cheese: I used cheddar cheese but you can use whatever you prefer.
  • Ranch seasoning: Grab an envelope packet or make your own.
  • Frozen hash browns: thawed
  • Veggies: diced onion and some frozen mixed vegetables
  • Crackers: I used a sleeve of Ritz crackers
  • Shredded Chicken: I used rotisserie chicken, but any other cooked chunks of tender chicken, like leftover chicken thighs or chicken breasts would work.

How To Make Chicken and Hash Brown Casserole

  • Step 1: In a large bowl, add sour cream, cream of chicken soup, milk, and reach seasoning mix. Whisk until smooth.
  • Step 2: Use a wooden spoon to stir in the hash browns, diced onion, mixed veggies, cheese and chicken into the large mixing bowl.
  • Step 3: In a small bowl, add crushed crackers and melted butter. Stir to combine. 
  • Step 4: Transfer the casserole mixture to a prepared baking dish or casserole dish. Sprinkle the crushed cracker mixture on top of the casserole and bake in a preheated oven until the topping is golden brown.

Recipe Tips

  • The best way to store leftovers is in an airtight container for up to 4 days. Reheat leftovers in the oven, covered in aluminum foil to prevent the crackers from browning as you're reheating the leftovers. 
  • Instead of crackers, you could use crushed Corn Flakes as your topping.
  • Want to trade up the veggies or add more in? Try adding some diced red bell pepper or any of your other favorite diced bell peppers.
  • Feel free to bring even more creaminess to the sauce mixture by adding some cream cheese to this mixture. If this is your goal, I'd also suggest using whole milk as the extra fat in it really shines and makes this easy casserole recipe really creamy when you have the opportunity to use it.

Can I make this casserole ahead of time?

Yes, you can make this easy Chicken Hashbrown Casserole recipe ahead of time. I would recommend mixing the casserole mixture and laying that out in theย casserole dish and refrigerating it until you're about ready to bake it. Then, once it's closer to the baking time, pull the casserole out and let it sit on the counter to come up toย room temperature while you make the cracker crumb topping. Sprinkle the topping on the casserole right before baking.

Can I use a different soup?

Sure, cream of celery or cream of mushroom will also work here.

Can I freeze this casserole?

Yes, this casserole freezes well. Let it cool completely and I like to cut it into single servings and freeze it for quick and easy meals.

Ingredients
  

  • 1 (10 ounce) can cream of chicken soup
  • 2 cups sour cream
  • ยพ cup milk
  • 3 tablespoons ranch seasoning or 1 envelope
  • 30 ounce pkg frozen hash browns thawed
  • 1 cup onion diced
  • 2 ยฝ cups shredded cheddar cheese
  • 3 cups cooked chicken I used a rotisserie
  • 2 cups frozen mixed veggies
  • 1 sleeve ritz crackers crushed
  • 1 tablespoon butter melted

Instructions
 

  • Preheat oven to 350 degrees spray a 9x13 baking dish with non stick cooking spray
  • In a large bowl add the cream of chicken soup, sour cream, milk, and ranch seasoning and mix until smooth.
  • Stir in the hash browns, onions, cheese, chicken and veggies and stir until combined.
  • Place the casserole into the prepared baking dish.
  • In a small bowl mix the crushed ritz crackers with the melted butter. Sprinkle it on top of the casserole.
  • Bake for 1 hour or until hot and bubbly, serve!

Notes

You could use crushed potato chips, corn flakes instead of Ritz crackers.
