- Step 2: Use a wooden spoon to stir in the hash browns, diced onion, mixed veggies, cheese and chicken into the large mixing bowl.
- Step 3: In a small bowl, add crushed crackers and melted butter. Stir to combine.
- Step 4: Transfer the casserole mixture to a prepared baking dish or casserole dish. Sprinkle the crushed cracker mixture on top of the casserole and bake in a preheated oven until the topping is golden brown.

- The best way to store leftovers is in an airtight container for up to 4 days. Reheat leftovers in the oven, covered in aluminum foil to prevent the crackers from browning as you're reheating the leftovers.

Chicken Hash Brown Casserole
Ingredients
- 1 (10 ounce) can cream of chicken soup
- 2 cups sour cream
- ¾ cup milk
- 3 tablespoons ranch seasoning or 1 envelope
- 30 ounce pkg frozen hash browns thawed
- 1 cup onion diced
- 2 ½ cups shredded cheddar cheese
- 3 cups cooked chicken I used a rotisserie
- 2 cups frozen mixed veggies
- 1 sleeve ritz crackers crushed
- 1 tablespoon butter melted
Instructions
- Preheat oven to 350 degrees spray a 9x13 baking dish with non stick cooking spray
- In a large bowl add the cream of chicken soup, sour cream, milk, and ranch seasoning and mix until smooth.
- Stir in the hash browns, onions, cheese, chicken and veggies and stir until combined.
- Place the casserole into the prepared baking dish.
- In a small bowl mix the crushed ritz crackers with the melted butter. Sprinkle it on top of the casserole.
- Bake for 1 hour or until hot and bubbly, serve!
