Why These Cookies Work
I love taking a box of cake mix and turning it into some fantastic cookies with a soft texture like these Whoopie Pies. Such a fun shortcut recipe but what really makes these cookies special is that classic Red Velvet flavor and look.
It's quick, fast, and ready in no time- with no need to chill dough wrapped in plastic wrap or roll dough out like other red velvet cookie recipes. Great for Valentine's Day, Easter, holidays, any special occasions, or just because you have a hankering for some tasty cookies. You'll also love these Strawberry Cheesecake Cookies!
Simple Ingredients
- Cake mix: Red velvet cake mix, any brand it doesn't matter. Duncan Hines seems to be the most available.
- All purpose flour: The extra all purpose flour gives them structure and helps them hold their shape.
- Large eggs: Room temp eggs make it easier to mix into any cake mixes or cookie recipes
- Oil: Vegetable oil or canola oil. Could swap this out for melted butter
- Vanilla extract
- Baking chips: You can use cream cheese chips or white chocolate chips
How to Make the Best Red Velvet Cake Mix Cookies
- Step 1: Using a hand mixer and a large bowl, combine cake mix, flour, eggs, oil, and vanilla. Mix together well.
- Step 2: Use a wooden spoon to carefully fold in white chocolate chips to the cookie dough in the large mixing bowl.
- Step 3: Line baking sheet with parchment paper, use a cookie scoop to make cookie dough balls, and place them on the lined baking sheet. Add a few extra chocolate chips.
- Step 4: Bake and then remove cookies from the oven to cool on a sheet for a few minutes (where they'll continue to bake a bit) before transferring them to a wire rack to finish cooling.
Easy Cookie Recipe Tips and Variations
- Add some frosting. If the baking chocolate chips weren't enough in these cookies, try adding some cream cheese icing or plain vanilla icing to your cookies. You could also ditch the white chocolate chips or cream cheese chips and just add some frosting to your delicious cookie.
- Change out the baking chips. Instead of white chocolate chips, you can use other flavored baking chips, or use a super nice, high quality white chocolate bar and break it into small chunks.
- Change out the cake mix. You could try a white cake mix, a yellow cake mix, or even a chocolate cake mix and it should be yummy.
- When scooping the dough out, use a 2-inch cookie scoop or make 2 Tablespoon-sized cookie dough balls.
- Melt some of your favorite white chocolate and make a white chocolate drizzle to use on the cookies. It's a great option to make these easy cookies stand out from others.
Recipe Faq's
Nobody knows that you've taken a shortcut and made cookies using a cake mix. They aren't cake like at all. Not only do they look like cookies, but the taste like delicious, normal red velvet cake cookies
.
The ingredients are premade making this a minimal effort, easy recipe to use to make a quick and delicious dessert.
I know it seems silly, but adding the extra flour helps give these chewy cookies that puffy look. It helps them get the right structure, shape, and helps them bake up, rather than just spread out on the baking sheet.
These easy Red Velvet Cookies should be stored properly for best results. Use an airtight container to keep the baked cookies for up to 5-7 days at room temperature. Keep them longer by freezing up to 3 months.
