Ingredients
  

  • ½ cup Stone grain mustard
  • ½ cup Dijon mustard
  • 1 cup honey
  • 2 teaspoon lemon juice
  • 2 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • 4 to 6 pieces boneless skinless chicken breast or thighs about 1½ pounds

Instructions
 

  • In a bowl mix the stone ground mustard, Dijon mustard,honey, lemon juice, garlic powder, paprika and salt together well.
  • Reserve about ½-¾ cup of this honey mustard mixture for a sauce garnish, then add the chicken to the remaining and coat well. Cover with plastic and refrigerate for at least 30 minutes, or overnight.
  • Preheat the grill to 400 degrees F. If desired, rub some canola or vegetable oil on the grill grates before heating.
  • Reduce the temperature to medium high heat and place the chicken on the grill.
  • Baste the chicken pieces with the marinade every 1-2 minutes, while cooking. Cook for about 5 to 8 minutes per side, until the chicken reaches an internal temperature of 165 degrees.
  • Remove the cooked chicken and allow it to rest for 5-10 minutes.
  • Serve with your favorite side or salad and the remaining honey mustard sauce.

  • Marinate longer for stronger flavor: While 30 minutes adds flavor quickly, marinating the chicken overnight gives the honey mustard mixture more time to penetrate the meat for a deeper flavor.
