Feta Chicken Salad
Ingredients
- 1/2 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1 teaspoon dried oregano
- 2 tablespoons fresh dill
- 3 cups rotisserie chicken
- 1/2 red peppers finely diced
- 1/4 cup red onion finely diced
- 1/2 cup celery finely diced
- 1/2 cup pepperoncini diced
- 1/2 cup feta cheese
Instructions
- In a small bowl mix the mayonnaise, garlic powder, oregano, and dill until combined.
- In a medium bowl add the chicken, red peppers, onions, celery, and pepperoncinis, and feta. Add the dressing and toss until coated.
- Add salt and pepper to taste and cover and chill in the refrigerator for 1 hour.
- Serve with crackers, pita bread, or as sandwiches.
Notes
- Canned chicken or leftover chicken can be used in place of the rotisserie.
