Recipe Tips

  • Canned chicken or any leftover cooked chicken you have can be used instead of rotisserie.
  • You could even make this a grilled chicken salad by quickly throwing a couple of chicken breasts on the grill, then shredding or slicing them.
  • For a lighter version, use Greek yogurt instead of the mayo.
  • This can also be served as a main course on top of a bed of romaine lettuce or in between two slices of toast bread!
  • Store leftovers in the fridge in an airtight container for 2 to 3 days.

Recipe FAQ's

What pairs well with feta cheese?

If you're looking to use feta cheese more in your cooking, it's always a good idea to pair it with bright produce like tomatoes, cucumbers, and onions. For something with a sweet and salty twist, you can also pair it with watermelon or peaches.

Why is my chicken salad watery?

Because this dish has so much fresh produce, there may be some excess moisture. Drain any liquid from the veggies before adding, and pat dry the cooked chicken as well to avoid a soggy chicken salad.
