Why This Easy Recipe Works
This Tuscan Chicken Orzo Skillet is perfect for busy weeknights
when you need a hearty, satisfying weeknight dinner without a pile of dishes after a long, busy day. Its rich, creamy texture and blend of savory chicken, sun-dried tomatoes, and spinach make it a family favorite easy dinner.
Let's Gather the Ingredients

- Dry orzo
- Chicken stock: chicken stock brings the most flavor, but chicken broth could be used.
- Heavy cream: heavy cream is the richest and creamiest, but try half and half if needed
- Cooked chicken: I prefer to dice my chicken. You could use tender chicken breasts or boneless, skinless chicken thighs
- Seasonings: garlic powder, Italian seasoning, red pepper flakes, minced fresh garlic cloves, salt, black pepper, and fresh basil or parsley
- Sundried tomatoes: I include the oil as it helps bring out some amazing flavors
- Spinach: I prefer fresh chopped spinach, but frozen could be used. If using frozen spinach, you only need 1 1/2 cups
- Cheese: shredded parmesan cheese is what I used.
How to make One Pot Tuscan Chicken Orzo

- Add all of your ingredients to your casserole dish. Use a wooden spoon to stir everything together, making sure the orzo pasta gets completely covered so it can cook properly.
- Bake in the preheated oven until the liquid is absorbed by the orzo. Remove from oven and fold in the parmesan cheese. Add salt and pepper to taste, garnish with fresh basil, serve, and enjoy!

Recipe Tips
- Instead of fresh spinach, try using kale, or a combination of the two.
- Feel free to try to add other things like sliced mushrooms, diced red peppers, some fresh tomatoes like grape tomatoes, or even swap the basil for fresh thyme.
- You can use any leftover chicken from previous recipes or grab a rotisserie chicken to make things quicker and easier.
- For even more cheesy goodness, add some freshly grated pecorino romano cheese with the parmesan.

Recipe Faq's
Sure, you could prep everything until it is time to bake. But this one pan dinner only takes 10 minutes of prep time as it is.
This is a filling and hearty meal as it is, but sometimes it's nice to have other things with easy meals like this. I like to try a green salad and some crusty Artisan No Knead Bread.
For best results, I enjoy this delicious dinner best the day that I make it. But leftovers can be stored in an airtight container and should be kept in the refrigerator for up to 3 days. When ready to enjoy again later, I have found that reheating leftovers on the stovetop works best. I try to add a splash of cream or water to help loosen up the creamy sun-dried tomato sauce since it will thicken as it cools and is in the refrigerator.
