An incredible no-bake treat, these S'mores Cookies are made with buttery Ritz crackers and feature a fluffy marshmallow filling!

Ingredients
  

  • 48 Ritz crackers 2 sleeves
  • 7 ounce jar marshmallow fluff
  • 24 ounces chocolate melting wafers
  • 4 sheets of graham crackers roughly crushed
  • 1/2 cup marshmallow bits

Instructions
 

  • Line a baking sheet with parchment paper or aluminum foil.
  • Place 24 Ritz crackers on the baking sheet and add about 2 teaspoons of marshmallow fluff to each cracker. (Its okay if it starts to spread a bit)
  • Place another Ritz cracker on top.
  • Add your melting wafers to a medium bowl and heat in the microwave for 1 minute on 50% power, stir and heat in 30 second increments until completely melted.
  • Using a fork dip the cookies into the melted chocolate and toss until coated. Tap the fork against the bowl to remove any excess chocolate and place back on top the parchment paper.
  • Add a few crushed graham crackers and marshmallow bite on top and let it dry.
  • Repeat with remaining crackers.

Notes

  • You can also top the cookies with mini chocolate chips or sprinkles.
