Ingredients Needed

- Chicken Thighs: You'll want boneless chicken thighs with the skin still on--this is what makes them nice and crispy!
- Olive Oil: Avocado oil can also be used.
- Seasonings: Gather up garlic powder, paprika, onion powder, Italian seasoning, and salt and black pepper.
How to Make Crispy Roasted Chicken

- Step 1: Combine the seasonings with olive oil in a small bowl.
- Step 2: Coat all of the chicken thighs with the oil and seasoning mixture.
- Step 3: Place the chicken thighs on a rimmed baking sheet with the skins facing up.
- Step 4: Bake at 400 degrees for 35 to 40 minutes, or until properly baked through and the crisp skin is a deep golden brown. Serve and enjoy!

Recipe Tips
- For extra crispy chicken skin, turn on the broiler for the last 2 to 3 minutes of cooking. Keep a close eye on the chicken to make sure it doesn't burn.
- Pat the chicken dry with a paper towel so the oil and spices stick to the surface better.
- Choose evenly sized chicken thighs for more even cooking.
- Another option is to use chicken breasts, though they'll cook a bit quicker, so keep an eye on them.
- Let the chicken rest for a few minutes after cooking so all of the internal juices can settle.

Recipe FAQ's
Chicken thighs are made up of darker meat, so they're a bit more flavorful, tender, and juicy than chicken breasts are. Thighs take a bit longer to cook than chicken breast meat, but their tender texture is worth the extra minutes!
Be sure to leave the chicken lots of space in between while it bakes. Using a wire rack over the top of a roasting pan can allow for better air circulation and will also prevent the chicken from getting soggy as it cools.
