  • Olive Oil: Avocado oil can also be used.
  • Seasonings: Gather up garlic powder, paprika, onion powder, Italian seasoning, and salt and black pepper.

How to Make Crispy Roasted Chicken

  • Step 1: Combine the seasonings with olive oil in a small bowl.

Why is my chicken soggy instead of crispy?

These amazing roasted chicken thighs come together in minutes and bake to perfection in the oven!

Ingredients
  

  • 6 large bone in skin on chicken thighs about 3 pounds
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat the oven to 400 degrees and place a cooling rack on a baking sheet or spray a baking sheet with non-stick cooking spray.
  • In a small bowl, add the olive oil and the seasonings and mix until combined.
  • Pat the chicken thighs dry with paper towels and brush the seasoning mixture on both sides of the chicken thighs. Even getting some under the skin.
  • Place the chicken onto the prepared baking sheet, skin side up.
  • Bake for 35-40 minutes or until the internal temperature reaches 165 degrees. You can also turn the top broiler on for the last 2-4 minutes to make the skin extra crispy.
  • Let the chicken rest for 5 minutes and serve!

Notes

  • Make sure your chicken thighs are roughly the same size for even cooking.
  • Boneless skinless chicken thighs can be used as well as chicken breasts but you'll need to adjust the cooking time accordingly.
