Ingredients
- 2 (14.5 ounce) cans cream of chicken soup
- 1 cup mayonnaise
- ¼ cup white cooking wine see notes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon curry powder see notes
- ½ teaspoon black pepper
- 4 cups cooked chicken shredded or diced
- 2 cups broccoli florets cut in small pieces
- 2 cups Sharp cheddar cheese shredded and divided
- 28 Ritz crackers crushed (which yields 1 cup)

Instructions
- Preheat the oven to 350 degrees F and lightly coat a 9”x13” casserole dish with nonstick pan spray. Set aside.
- In a large bowl add the cream of chicken soup with the mayonnaise, white wine, garlic powder, onion powder, curry powder, salt and pepper, mix with a spatula until sauce is combined. Add the chicken, broccoli and mix again, then add half of the cheddar cheese, mix well.
- Spread into the prepared casserole dish. Top with the remaining cheddar cheese then the crushed Ritz crackers.
- Bake in the 350-degree F oven for about 40-45 minutes until the casserole is hot and bubbly and the Ritz crackers are golden brown.
- Serve hot over cooked white rice or egg noodles and garnish with fresh chopped parsley.
Notes
- You can substitute milk for the cooking wine if you prefer alcohol free version.
- The curry powder is highly recommended, but you can leave it out if you prefer.
- Frozen thawed broccoli can be used as a substitute. Make sure to drain all the liquids very well before mixing it into the casserole.
