- Sugar: For this recipe, you'll need 3 different kinds of sugar--granulated (white) sugar, brown sugar, and powdered sugar.
- Eggs: You'll need whole eggs for both the cookie dough and cheesecake, and an extra yolk to give the cookie dough more richness.
- Chocolate Chips: I typically go for semi sweet chocolate chips for this recipe.
- Cream Cheese: I only tested this using full fat cream cheese.
How to Make Chocolate Chip Cookie Cheesecake Bars

- Step 1: In a large mixing bowl, cream together butter with white sugar and brown sugar.
- Step 2: Add the vanilla and eggs (with additional yolk) and beat until combined.

- Step 3: Carefully mix in the all purpose flour, baking soda, and salt.
- Step 4: Fold in the chocolate chips.

- Step 5: Press half of the cookie dough into the bottom of a prepared 9x13 baking pan.
- Step 6: In another large bowl, combine the cream cheese, sour cream, powdered sugar, egg, and vanilla.
- Step 7: Spread the cheesecake mixture over top of the cookie dough.
- Step 8: Add the remaining cookie dough over top of the cheesecake, then bake at 325 degrees for 30 to 35 minutes.

- Give the bars some time to set in the fridge before slicing them for best results. I recommend at least 2 hours, but these are great to make a day or so ahead of time and then slice when you need to serve them.
- Be careful not to overbake the cookie bars. The cheesecake center should have a slight jiggle to it when it's done baking.
- Feel free to switch things up by using different kinds of baking chips. White chocolate chips, peanut butter chips, or even cinnamon chips would give this dessert a completely different flavor.

Ingredients
- 1 cup butter softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1 egg plus 1 egg yolk
- 2 teaspoons vanilla
- 2 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups semi sweet chocolate chips
Cheesecake Layer
- 1 ( 8-ounce) pkg cream cheese softened
- 1/4 cup sour cream
- 1/3 cup powdered sugar
- 1 teaspoon vanilla
- 1 egg

Instructions
- Preheat the oven to 325 degrees. Line a 9x13 baking pan with parchment paper.
- In a large bowl add the softened butter, brown sugar and granulated sugar, using a hand mixer beat until combined .
- Add in the egg, extra egg yolk, and vanilla and mix until combined.
- Add in the flour, baking soda and salt and mix just until everything comes together.
- Add in the chocolate chips and mix until incorporated.
- Add 1/2 of the cookie dough into the bottom of the baking pan and press into an even layer and set aside.
Cheesecake Layer
- In a large bowl, add the softened cream cheese, sour cream, powdered sugar, egg, and vanilla, and using the hand mixer, mix until creamy.
- Spread the cream cheese mixture evenly over the chocolate chip cookie dough.
- Press the remaining cookie dough into disks and place it on top of the filling. You won't have enough to cover it.
- Bake for 30-35 minutes or until golden brown and the cheesecake is set.
- Let cool completely, then chill for at least 2 hours before slicing.
Notes
- Don’t overbake the bars. The center should still have a slight jiggle when removed from the oven since the cheesecake layer will continue to set as it cools.
- Store leftovers covered in the refrigerator for up to 5 days.
- These bars freeze well. Wrap individual bars tightly and freeze for up to 2 months. Thaw overnight in the refrigerator before serving.
