Why This Recipe Works
I love roasting everything in the oven on a large sheet pan making clean up easier. Plus, you get juicy sausage and tender veggies every time.
Sheet pan meals are typically an easy way to make protein and vegetables simultaneously and are generally a simple way to make a low-carb dinner. This sheet pan dinner recipe is great for a busy weeknight when you want dinner quick or need to do some weekly meal prep!
Let's Gather the Ingredients
- Italian sausage: you could use other types of sausage if desired. While I liked using pork sausage, you can use chicken sausage or turkey sausage instead. If you want some heat, try using hot Italian sausage.
- Veggies: a mix of red bell pepper, yellow bell peppers, and green bell pepper, and an onion
- Cooking oil: olive oil
- Seasonings: minced garlic cloves, salt, Italian seasoning and smoked paprika
How to make Sheet Pan Sausage and Peppers
- Step 1: Prep ingredients. Using a sharp knife, slice peppers and onions into ¼ inch slices. Then cut sausages into small pieces.
- Step 2: If necessary, line your large baking sheet with aluminum foil or parchment paper. Spread out all cut sausage, sweet bell peppers and onions on baking sheet before drizzling with oil and seasonings. Toss to coat. Bake in a preheated oven and serve.
Recipe Tips
- Any leftovers of this easy weeknight dinner can be transferred to an airtight container and can be kept in the fridge for up to 4 days.
- When laying out your perfect meal on the roasting pan, be sure to spread everything on in a single layer so it can all cook evenly.
- If it is easier for you, you can add everything to a large bowl and coat with the oil and seasonings. Toss together in the bowl before transferring everything to your prepared baking sheet.
- Instead of cutting the sausage links into smaller pieces or rounds, you can leave them whole on the sheet pan.
Recipe Faq's
You can serve these sausage and veggies as is, or pop them on some hoagie rolls or a hot dog bun and enjoy with a slice of melted cheese, like mozzarella cheese or provolone cheese. Additionally, you could serve with a side of rice, cauliflower rice, Baked Potatoes, Sweet Potatoes, or Mashed Potatoes. You could serve this sausage, onions, and peppers recipe over pasta with some marinara sauce too. Options are endless, use whatever you're craving.
You can add other hearty vegetables like cherry tomatoes, zucchini, yellow squash, fresh green beans, mini corn cobs, baby potatoes, red onion or yellow onions. Additionally, you could add some fresh grated parmesan cheese over the pan before serving. There are a bunch of different ways to change up this sheet-pan dinner, use what your entire family will enjoy and whatever you have on hand.
Of course, you can. Prep the sausage and veggies just as you would with this recipe. Add olive oil to a large skillet and cook veggies and sausage over medium heat until the sausage is cooked through and the sliced onions and bell peppers are tender.
