How to Make these Sausage Muffins

- Step 1: Brown the sausage in a large skillet. Set cooked sausage aside on a paper towel-lined plate to drain.
- Step 2: In a large mixing bowl, combine flour, salt, and baking powder.
- Step 3: Combine cheese and sausage with the flour mixture.
- Step 4: In a separate bowl, whisk together eggs, milk, maple syrup, and melted butter.

- Step 5: Pour the butter mixture into the dry ingredients and mix until well combined.
- Step 6: Divide muffin batter into a 12-cup muffin tin prepared with cooking spray. Bake!
- Step 7: While the muffins bake, melt butter over medium-high heat. Whisk in flour.
- Step 8: Pour in half the milk and whisk until combined. Add the other half and repeat. Season with salt and pepper to taste.

Ingredients
- 1 pound breakfast sausage
- 2 cups all-purpose flour spoon and leveled
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup pepper jack cheese shredded
- 1 cup cheddar cheese shredded
- 1 cup milk
- 1 egg
- 1/4 cup pure maple syrup plus extra to brush on top
- 6 tablespoon butter melted and cooled slightly
For The Gravy
- 2 tablespoons butter
- 2 1/4 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees and spray muffin tin with non stick cooking spray.
- Heat a large skillet on medium high heat and add the sausage breaking up with a spoon until browned and cooked through. Remove the sausage to a plate lined with a paper towel to drain. Set the skillet aside for now.
- In a large mixing bowl add the flour, baking powder and salt and whisk until combined.
- Add the sausage, shredded cheese to the flour mixture and mix.
- In a medium bowl add milk, egg, maple syrup and melted butter and whisk until combined.
- Pour the egg mixture into the flour mixture and mix until everything is incorporated.
- Scoop the batter into the muffin tins evenly. Bake for 18-20 minutes or until a toothpick comes out clean. Brush the tops with more maple syrup if you'd like..
For The Gravy
- Heat the same skillet you made the sausage in on medium-high heat and add the butter. Once melted, add in the flour and whisk until smooth, 1-2 minutes.
- Pour in half of the milk, whisk, and then pour in the other half and whisk. Bring to a low simmer for 3-4 minutes or until thickened.
- Serve muffins with a side of gravy!
